Bourbon Boston Baked Beans

Bourbon Boston Baked Beans

Boston beans are the ultimate comfort food, but we’ve given them a Kentucky twist by adding a good splash of bourbon into the mixture. The liquor adds a depth of flavor without overpowering the dish.

Ingredients:
  • 1 tablespoon canola oil
  • 1 white onion, finely chopped
  • 3 garlic cloves, crushed
  • 5 ½ oz. pancetta or smoked bacon, chopped
  • 2 cloves
  • Pinch of sea salt
  • 1 tablespoon tomato paste
  • 2 x 14-oz. Cans navy beans, drained and rinsed
  • 1 tablespoon Dijon mustard
  • 1 teaspoon molasses
  • 3 tablespoons Jim Beam® Bourbon
  • ⅔ cup chicken stock
Preparation:
  1. Heat a large Dutch oven over high heat, then pour in the oil. Once the oil is hot, add the onion, garlic, bacon, cloves and salt and cook for 5 minutes, uncovered, until softened. Stir in the tomato paste and cook for 1 minute, then tip in the beans.
  2. In a small pitcher or bowl, stir together the mustard, molasses, bourbon, and stock to combine, then add this to the beans in the saucepan. Stir well, then bring the mixture to a simmer. Cover the saucepan with the lid, reduce the heat to low, and cook for 30 to 40 minutes. Fish out and discard the cloves, and serve immediately.

Bourbon Butter

Perfect on steaks, mashed potatoes or corn on the cob, this delicious bourbon butter is all you need on the side.

Ingredients:
  • ¼ cup (½ stick) slightly salted butter, at room temperature
  • 1 teaspoon mustard powder
  • 1 tablespoon Jim Beam® Bourbon
Preparation:
  1. Mash the butter with a fork until it is smooth, then mix in the mustard powder and bourbon.
  2. Add to your favorite dish.
Bourbon Marinade

Bourbon Marinade

Bourbon is a fantastic partner for soy sauce, and the combination makes a delicious quick-fix marinade that works with all sorts of meats and vegetables. Try it with red meat, skinless poultry, oily fish such as salmon, and hardy vegetables such as broccoli or portobello mushrooms.

Ingredients:
  • ½ cup Jim Beam® Bourbon
  • 2 shallots, minced
  • 2 tablespoons soy sauce
  • 1 ½ tablespoons balsamic vinegar
  • ½ tablespoon canola oil
Preparation:
  1. Put the bourbon and shallots into a small saucepan set over medium-high heat, bring to a boil, and simmer for 3 minutes, until the shallots have softened. Remove the pan from the heat and stir in the remaining ingredients until well blended. Let cool completely. This marinade will keep in a sealed container in the refrigerator for up to 3 days.
  2. Pat your meat or vegetables dry. Place them in a nonmetallic bowl and mix with the marinade until well coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, stirring the ingredients into the marinade occasionally. If you prefer, you can combine the ingredients with the marinade in a resealable plastic food bag. SImply ensure you squeeze out as much air as possible from the bag and seal it well before leaving it in the refrigerator to marinate. Discard the marinade when ready to cook.
